Every cut is dry-aged for 35 days, a process that intensifies flavour, deepens character, and delivers that unmistakable richness you only get with time. The result is beef that’s more savoury, more tender, and unapologetically bold.

Each month, we showcase a different exceptional cut, from richly marbled Irish Rosendale Wagyu to Australian selections and renowned Galician beef, expertly selected for flavour, provenance, and how beautifully it responds to ageing.

Think big, bone-in steaks hitting high heat, the marbling rendering slowly, the edges caramelised, and the centre kept perfectly juicy. Served with rich peppercorn sauce and your choice of classic steakhouse sides, golden house fries, creamed spinach, or a fresh chopped salad.
